The name Zefir (or Zephyr) comes from the ancient Greek god Zephyrus who is the personification of the West wind — powerful, unpredictable, and capable of both destruction and renewal. According to legend, he once offered humanity a recipe for an impossibly light, heavenly dessert as a gesture of peace. That gift became the earliest prototype of what we now know as Zefir.
This mythical beginning set the tone for the dessert’s identity: airy, delicate, and touched by something divine.
The earliest documented version of Zefir appeared in the 14th century. At that time, it resembled a rustic pastila made from simple, natural ingredients - Baked apples, Honey for sweetness, and later, egg whites for a lighter color and texture.
Centuries later, French confectioners elevated the recipe into the form we recognize today. They perfected the whipping technique, introduced agar‑agar for structure, and refined the dessert into elegant, cloud‑like shapes.
Most importantly, they gave it its modern name — “Zéphyr”, inspired by the same mythical wind that started the story.
